Holding it for a couple of seconds gives the electronic nanny a chill pill. The car will allow some wheel spin, and lets the tail out. The electronics also cause the diff to act like a limited slip diff. If you hold it in longer, it turns the nanny off completely, and the diff will be totally open, which isnt very fun.
Just beware, if you get in an accedent while having the ESP turned off, and the insurer finds out, they won't pay out.
BTW, on your (our) car, the DSC on tar road isn't that hectic. Its actually reasonably controlable. Dirt roads it is fun, but then you could land in trouble if you don't know what you are doing....
In more powerful cars (M3) you have to have big balls to turn it off on dirt/wet....
