Knock tables can be desensitized in the map, but to what degree is the biggest question. You would really need someone who knows what they are doing to re-calibrate these, assuming you stick with the stock ECU.

Taking a look around at the performance seen out of the various "bigger" N54 single builds touching 800-900hp, they simply are not putting down any better figures (besides on the dyno of course). I suspect this is down to a compromise in driveability as a result of factors like lag, unmanageable torque levels and general lack of availability of parts to cope with those sorts of numbers.
