I agree with you, and don't like this aspect of car service myself, but it seems to be the norm from what I've seen. If you don't mention what is specifically wrong with your car, even if it has come into the workshop sawn in half or on fire, it will not be fixed (a little over-exaggeration). If it isn't on the jobcard, the technicians do and must have tunnel vision when it comes to other problems.
Sometimes during the service of a car I notice something wrong (aircon isn't blowing cold, a noise here or there, etc) and I'll try bring it up. It will almost always be ignored unless it endangers the driver. I wish it wasn't like this, I do, but it covers the dealership financially and with regards to time allocation when servicing your vehicle. If we had to look for and fix any issues that the driver
didn't mention or notice, the turnover would be dreadful.

Not sure hey. I love the work, I do, but the pay is
terrible, so it makes it difficult to say I'll be there forever or another day at this point. I'm waiting to see what sort of increases I get as I finish my levels through the apprenticeship, next one being soon!
