Is it a good idea to run semis on stock rims for everyday driving or will it be dangerous in wet weather?

It is the aquaplaning you have to worry about. I have driven with semi slicks in heavy rain before and it's fine as long as you don't have big puddles. They tend to aquaplane a lot quicker than normal tyres. Other than that, they noisy, but fine for daily use, just don't expect high mileage from them.
