FEELER: Some expert advice/opinion needed

Newbie to the forum here and soon to be a double beemer owner [FINGERS FIRMLY CROSSED]

Anyway long story short, I need to draw on the expertise of the forum members. Like i mentioned in my intro, I am looking to get a project E30 that will probably be a full rebuild. 

So i'm looking for something that is a good enough donor to get started. The two things that i know for certain i want at this stage are:
1) It has to be a two door with the electric windows option;
2) It will be an engine swap. Probably the 1JZ (Sooooooooooorrrry in advance, i know how touchy this is)

Sooooo,  back to the matter at hand. I needed to get a feeler for what you guys think. I am leaning towards an Mtech II plastic kit (skirts bumpers and spoiler) but I am also a fan of the 'clean' look so the Mtech I still feels tempting. What would your choice be for a rebuild and what are the things to look for in terms of the kits? I've seen here that the fiberglass kits seem to be a no go. Any suggestions are welcome. By the way contrary to me wanting to do the engine swap i'm actually quite a purist :smilebounce:

Anyway, like i said i am also still learning as I go along so this is where i am at the moment. I have an idea of where i need to take the car for the full body work and engine swap. Then after that i'm going to start looking at the other crucial things like soundproofing, interior, seats and steering wheel (depending on whether it will be Mtech I or Mtech II), simple sound upgrade (more of a performance guy than sound tbh), brakes, brake lines, gearbox, suspension etc. NB this is is no specific order and I will be doing this as a project to I have put it at +- 2 years to finish (but do we ever 'finish' these upgrades? Lol).

What do you guys think? Mtech I or Mtech II? Also what would be your first option as a donor car? I was advised that I should try get a decent E30 as possible to save me the pain and moola in getting it to what i envision. Saw this post of a car previously sold and i was a little bummed because I imagined a budget of 40-50k ish for the car itself. Anyway, let me hear your thoughts. A 400/450hp daily would be the dream at the moment. Anyone who has done something similar with the conversion please share your joys and sorrows. 

Also, would an E30 convertible work for this idea? If so, what would be the best generation specific kit to use? What are some of the tricky issues with the cabrios?

Let me know your thoughts on the Mtech I v Mtech II options as well. God willing looking to pull the trigger in early Feb.

PS - If i could buy one from a forum member it would be first prize!

Will watch this super closely - I've dreamed of an S54 swapped E30 coupe with some mods (maybe even E30M3 box flares) and interior sortings for an age. But then I realize I'll just get robbed and it'll have cost me R200k+ just in mods and I can't justify it. OP - good luck! :)
