could be a couple of things..........when did you overhaul the cooling system.

expansion bottle
thermostat
thermostat Housing
radiator cap
Hoses
pressure test the system
water pump
viscous fan

I went through the same exercise most recently on my 328i

The cooling system is a closed pressurised system so evaporation is not possible unless there is a leak.

Check for obvious leaks. Coolant residue is usually easy to spot. Then check all of the items mentioned above.

Bleed the cooling system (various websites on Google) to eliminate stubborn air locks, refill and check water level again when cold. If level drops substantially again then there is a leak somewhere (it's a closed pressurized system). Also check for any milky residue on the filler oil cap (water getting into oil). The fact that you lose water is where the diagnostic should start.
