But it's a stiffer setup so surely would be better in the in the corners?

Nope, the only difference was a hard top roof. Everything else is identical.

torsional rigidity of the Z4M roadster is 16.000 Nm/deg and the coupe is 33,000 Nm/deg.

Weight difference on paper is 22kgs lighter in the roadster... i think they would be very identical....
