Thermostat help question

A mechanic that I met said that he normally removes the thermostat on the 325i E36, is it fine not having one in because mine is stuffed but I'm just worried of not having one in, oh one last thing let's see if I can explain this properly :sorry:
I'm new to BM and don't know the terminology and the experience like u guys.
I had to replace my clutch fan, by removing it that plastic housing where pipes join and I think goes to thermostat cracked when loosening the bolt, one was replaced, now earlier I was topping up with water and noticed a few drops of water coming out from where I think the thermostat is ,a drop on this plastic housing I replaced, Is it because of the water I'm putting in or not (filling) , I didn't know u had to take that little screw off when topping with water which now I know and that's how I did it (no bubbles )

Maybe to make it clearer about which specific piping s you are referring to, go onto realoem and search for the pic of the part and post it here.

But generally driving without a thermostat imo is not such a great idea.
